Automatic "sleep time" can be adjusted in System Preferences/Hardware/Energy Saver or you can force
the machine to sleep by pressing Option-Command-Eject.

I have a follow on question from this re my iMac fp 1GHz

Why can't I get it to sleep properly when just left?

If I activly put it to sleep everything turns off , HD, fan and all,
but when I just leave it, the fan stays on.

All the sleep options are on.

????
