Automatic "sleep time" can be adjusted in System Preferences/Hardware/Energy Saver or you can force the machine to sleep by pressing Option-Command-Eject.

Thanks for the key combo tip. Is there anything similar for the screen saver? (or, for that matter, any other quick way to lock my system so nobody can use it if I leave my room at work)
