So, if I'm following this thread correctly, there are two options.
1. Nobody account active. We see all messages that are not deliverable, but
the sender does not.
2. Nobody account inactive (or non existant). We don't see any
non-deliverable messages, but the sender does.
Is there a way where both can happen?

Most mail servers do not have a "nobody" alias, so that mail will bounce
properly.
The drawback to taking it away is that it would be possible for spammers to
do a "dictionary attack" testing lots of potential E-mail addresses at your
server to see if they are valid. That eats up your resources (bandwith +
log files). It doesn't happen often unless you are specifically targeted by
the spammer.
