Look up "roaming profiles" on www.slipstick.com and TechNet to get some more information on how to do this correctly. I've used this solution in the past with great success. However, there are some downsides; the logon/off time can get to be pretty long if your users have large mail files.
On the upside, if you use the full benefits of roaming profiles (all data, desktop settings, network mappings, permissions ,etc. loaded at log in) your users are never down due to hardware problems. They can log on to any machine and it "looks the same" to them. We just converted from Exchange to Imail due to client license costs of upgrading an older version of Exchange to the latest and greatest Exchange (no more pop3 licenses). Imail is definately more cost effective in our case and offers everything our users thought they needed in exchange - web based email, calendering. During the conversion, I and my crew tried to have exchange and Imail running on the same box...let's say it was a big headache. imap and smtp on one, pop3 on the other, store and forward.
