Review comment:
       The only worry I have with `replace` is the meaning it has in Iceberg. 
When I hear `replace`, I usually assume a compaction job where the data does 
not change. It feels more like an overwrite to me if we are talking about 
copy-on-write. Also, do you see a separate interface for merge-on-read? My 
intent was to have one.
   
   I am not entirely sure we don't need any coordination between scans and 
writes for merge-on-read, though. For example, we still want to propagate the 
expression that was used to scan for checking concurrently appended files under 
serializable isolation.
