yes, 1Msps may be enough for some application, assume though that about 1/5th is upper reliable analogue frequency rate rather than nyquist. (/2). So decide highest frequency you need to see and x5 for 1 channel sample rate or x10 for two channels.
8bits if it really is 8 bits and you have good range of ANALOGUE input amp/attenuator in front of ADC may be enough. But I find in real world of cheap instruments this is not true. 8bits is a toy. You need 10bit ADC... that is 9 bits accuracy.,.. If you using 1/2 the screen or half full scale then you have indeed 8 bits only on your 10 bit ADC! My technician at last job had Digital Spectrum Analyser up to 2GHz. After a few weeks on the job he would only use the 20 year old fully analogue HP141T spectrum analyser and 20 year old Hameg Analogue scope.
