From various contexts here I have the feeling a monitrice is more than a
teacher's assistant. I guess it it requires official qualification to be
allowed to call yourself a monitrice.
... So
possibly it would translate to lace monitor, or teaching assistant, in a
school, or an assistant curator (eg getting lace out for visitors to a
reserve collection, maybe?) in a museum. ...
