Email: Claris Emailer 2.0v4 (if you can locate a copy) -- possibly the best email app ever created.
Icab 2.9.1 (http://www.icab.de) -- great, modern, lean browser with support for 68k boxes. The main consideration as to how well the machine will function is how much RAM is in it. I've found that you can surf with iCab without pulling all your hair out on a machine that has >16MB RAM in the 68k models, but the more the better.
