Well... got to throw in my vote for Eudora Lite - always found it a lot more straightforward than Claris. Not to mention free. E-mail me off list if you want a copy, I should have it archived on an old MacAddict CD.
Icab 2.9.1 (http://www.icab.de) -- great, modern, lean browser with support
for 68k boxes.
Never had much luck with iCab on older machines. Always seemed buggy on 7.6, even though it runs fine on later OS's.
I'd recommend the Navigator standalone, or possibly Netscape 3.04 - that was a fairly stable version. For sheer speed on older machines though, nothing beats using a text browser like Lynx or Wannabe.
As a side note, Cyberdog was very good, but I'm not sure if that ran on 7.6

If the machine will run 7.6, it can certainly be used on the net, even via cable if you can find a LC-PDS Ethernet Card (I think that was what the 520 took). Like Lincoln says, the real deciding factor will be the amount of available RAM - but those 72 pin SIMMs were very cheap the last time I bought any, hopefully they would be even cheaper now
