With 16 MB of VRAM it would be difficult to run two monitors off of one  
card, actually you are not able to currently use the video stuff in  
OS-X.
If you do upgrade the card to one that has more memory, you can not  
only get two displays, but also enable Quartz Extreme, etc. (all of the  
video goodies that come in the OS).
