If I want the best quality mp3 ripping, I use the iTunes LAME plug-in

This uses the iTunes interface (so metadata is fetched through the
normal Gracenote database), but encodes through the LAME algorithm. I
insert the CD and make any alterations I might want to the tag
information in iTunes, launch iTunes-LAME-3.98.2-x86 to bring up the
plug-in, and set the options for "--alt preset insane" to rip at 320
kbps. I'm still running Leopard, so I can't check whether this
version works for Snow Leopard, but I've read that other's are using
the iTunes LAME plug-in with Snow Leopard. (There may even be a newer
version around; I just don't know whether there's a precompiled binary.)
Ricardo, this a bug that is in iTunes when you try to change to the
custom mp3 with VoiceOver. I find that I can do this with VO-Shift-
Space to click on the buttons (instead of using VO-Space), but I don't
know whether this is simply because I updated from preferences where
this was set under an older version of iTunes. I suspect that if the
setting is ever activated with a mouse (and that includes using the
NumPad Commander option of pressing "5" on the numeric keypad to click
on option buttons) that you can choose 320 kbps with VoiceOver.
