Well, as you know, ITunes simply didn't work for me, but to name a few advantages...
Max supports some 50+ file formats. Max has error correction schemes tohelp you with damaged discs. Max does file format conversions. Max can rip to two or more formats at once. Max can do Cue sheeting. It gives you more tagging options. If you don't care about these or any other advanced CD ripping features, there may not be any value in switching to max. Or, if you really like ITunes, and you want advanced ripping features, such as tthe ability to import flac files into your itunes library direct from CD, Max intergrates seemlessly with ITunes to let you do your thing. To be, Itunes is like a cheep utility knofe with 10 tools on it, none of which does it's job as well as something built just for one purpose, and all of which are clunky to use because of the bulk of the knife handle they are housed in.
