As always, I also recommend NetBSD/macppc as a nice, small solution. Since
your 7500 has been upgraded to a 604e, it will run splendidly on that system
and little memory is required as long as you stay out of X. If you're not
going to compile a kernel, which it seems like you're not, you can just put
on the base distro and some fun stuff, and go. See

However,

As others have suggested, why Linux instead of MacOS? MacOS 9 is a much
better GUI than X-Windows ever was.
