Macminix runs on the 68000 macs but doesn't have any networking capabilities so not much can be done with it. It also needs the MacOs ( and not just to boot I think) ucLinux looks great and runs on the MC68000 chip, but I've never found a port for Mac 68ks. There's a page for an abandoned Atari 68k port and what looks like project that never got started on sourceforge for Macs. I'd love to be able to get my old pluses and classic going on *nix, but sadly I lack the programming skills to help these efforts...
