Macs test the RAM at boot, so the more RAM you have, the longer it takes.

In OS 9, if you have virtual memory turned on, the OS deletes the swapfile
and creates a new one at boot. The more RAM, the slower it boots.

I tried it, the key combination for me is option-command while opening.

I always thought Mac OS 8.x was faster than 9.x, at least it used less RAM.
