There are many reason why phone companies are switching to fiber optics. But
here are
the two most important.
1) capacity. You can transmit more data over a single fiber than over a single
coper cable.
2) fiber cables don't pick up noise from their surrounding brothers (ie,
surrounding
fiber cables). copper wires do. This is what happens when you hear another
converation in the background.
The fibers used by the phone-companies are made out of a special glass-alloy.
The
'fibers' used for linking audio is made out of plastic with a much lower
bandwidth.
(And thus cost-reducing).

AFAIK, Dobly Digital, DTC and/or MPEG-1 sound surpasses the bandwidth of TosLink
(
the optical link). Thus coaxial is used.
