I played around with some settings here, but I couldn't find any
combination that stopped the freezes.

I switched to xfce and the problem persisted. I've now switched to
fluxbox, and I just came back from lunch to a working desktop so maybe
that has fixed it. Also, I really like fluxbox so I may just stick with
it, Gnome be damned.
