Just because someone hasn't done it doesn't make it impossible.  It 
would actually be pretty easy to make a standalone mail or composer 
client.  All you'd have to do is remove the browser items from the menus 
and start mozilla with the -mail or -editor command line option.  You 
would still have all the browser code but no menus to open it.  You 
could even delete the navigator chrome files so long as you left the 
shared chrome in.  In the end you could save a few hundred K of disk 
space (what's that worth with HD prices what they are, about .1 cents?) 
but I don't see what else you'd gain.
