The difference between those two can be interesting, esp. when there
are (large) delays; together with the dates in the Received: headers
it helps to figure out where a delay might have happened.

Stating the obvious:
The Date: header should have the date when the mail was sent,
the date in the From line should be the date when the mail was
written to the mailbox.
