Lemon Sour Cream Pound Cake

Cake:
1 c. butter (no substitutes)
2 c. sugar
3 eggs
2 1/4 c SIFTED cake flour
1/4 tsp. salt
1/2 tsp. baking soda
1 c. sour cream (lower fat will work, no fat will not)
Zest of one entire lemon
1/2 tsp. vanilla extract
1/2 tsp. lemon extract

Glaze:
1/2 c fresh lemon juice
1 to 1 1/4 c. SIFTED powdered (confectioners, castor) sugar

Start oven at 350.
Cream butter & sugar till fluffy..........beat eggs in well, one at a time.
Sift flour, salt, & soda onto a paper plate, then mix gradually into the egg mixture. Beat in sour cream slowly, then the zest and the flavorings.
Pour into a greased & floured 10" x 5" loaf pan, (have a friend who made it in a bundt), and bake 1 hour to 1 hour and 10 minutes, or till the cake center springs back immediately when touched lightly.

Turn out onto a wire rack to cool. Be gentle, it's a very moist cake.
Mix glaze thoroughly when cake is completely cool, drizzle glaze over top, letting it run down the sides. Freezes pretty well, but so good just made.

SIMPLE CHILI RECIPE
1 pound ground beef, browned and drained
1 can of diced tomatoes in juice
1 can chili beans
1 t. soy sauce
seasonings to suit (optional)

In a 4-6 qt. pot, brown ground beef and drain grease. Add tomatoes and chili beans and soy sauce. Add seasonings. I like to use dashes of chili powder, paprika, ground ginger, oregano, curry powder, salt and pepper. The soy sauce and seasonings can be adjusted to suit your tastes. Hot sauce can be added if you like that. After adding seasonings, simmer for 45 minutes to 1 hour; stirring occasionally. Serving suggestion -- put Fritos in a bowl, then spoon chili over that and top with shredded cheese. For a larger pot of chili, recipe can be doubled.

CHUNKY SLOPPY JOES
2 lbs. Ground beef
2 T. soy sauce
dash of salt & pepper

Brown beef with seasonings, then dip off grease & juices. Then add:
1 can tomato soup
1 can diced tomatoes
1 T. ketchup
1 t. mustard
seasonings to suit (optional)

Stir well and simmer for approimately. 45 minutes, then serve. This can be served as open faced sandwiches over your favorite buns or bread topped with shredded cheese. Could also be served over corn chips with fresh lettuce and shredded cheese. As for seasonings to suit -- I like to use dashes of chili powder, paprika, ground ginger, oregano, curry powder; but you don't have to add any other seasonings than the ketchup and mustard.
