Cranberry Apple Crisp
5 cups 1/2" sliced Granny Smith cored, peeled or unpeeled apples (about 6 medium apples)
1-1/2 cups fresh cranberries
1/3 cup sugar
TOPPING:
1/3 cup all-purpose flour
ΒΌ cup quick or old fashioned oats
1/2 cup brown sugar
1 teaspoon cinnamon
1/4 cup chilled butter, grated
Position oven rack so crisp will bake in the middle of the oven. Preheat oven to 375 F. Spray a 9-inch square baking pan with Pam. In a large bowl, mix the apples and cranberries with the sugar until coated. Transfer to baking pan.
Topping: Mix flour, oats, brown sugar and cinnamon. Work in butter until light and crumbly.
Sprinkle topping evenly over apples and cranberries. Bake 30 min. @ 375F or until apples are tender-crisp. Cool on a wire rack about 15 minutes before serving. If desired, serve with a small scoop of a light ice cream or frozen yogurt .

Baked Stuffed French Toast
2 cups milk
2/3 cup maple syrup
2 8-oz. cream cheese
1 loaf French bread or English Muffins
12 eggs
Break bread into small pieces and put in a greased 9 x 13 inch pan. Break cream cheese into chunks and put in pan with bread. In a bowl mix eggs, milk, and syrup. Pour over bread and cheese and stir until bread is moist. Bake at 350 degrees for 45 minutes.
Serve hot with lots of maple syrup, sausage, bacon, and fruit compote. Can make ahead of time, put in fridge overnight, and bake in the morning.
Stuffed French Toast
Serves 8
20 slices homemade-style white bread (Amish, Friendship bread, or Old Fashioned Buttermilk bread) crusts discarded, cut into 1 inch cubes
2 (8 oz.) packages of cream cheese - cut into 1 inch cubes
1 cup blackberries or blueberries (frozen or fresh)
12 large eggs
1/3 cup maple syrup (or you can substitute 1/3 cup orange juice)
2 cups milk
1-1/2 teaspoons vanilla
Arrange half the bread cubes in buttered 9x13 inch baking dish. Scatter cream cheese and berries over bread. Arrange remainder of bread cubes on top. Whisk together eggs, syrup, milk and vanilla. Pour over mixture. Cover with foil and refrigerate overnight.
Bake, covered for 30 minutes, and uncovered for 30 minutes at 350 degrees.
