Orange Slice Cookies
1 egg
3 Tablespoons Vegetable Oil
1 Cup Pecans (chopped)
10 Orange Slice Candies (cut up small ,I use scissors)
1 box jiffy Brand yellow cake mix

Mix & Bake at 350 for 9 or 10 minutes.

Spicy Holiday Fruit Cookies
Combine:
3-1/2 c. flour
2 t. baking powder
1 t. cinnamon
1/2 t. nutmeg

Set this aside.
Cream:
1 c. shortening
2 c. brown sugar
2 eggs

Blend into dry ingredients, alternately with 1/2 c. milk.
Stir in:
1 c. pecans, chopped
1 c. dates, chopped
1 c. candied cherries, chopped or cut in half
1/2 c. regular oatmeal

Drop by teaspoonfuls on ungreased cookie sheet. Top each with a cherry half (recipe didn't say if you added cherries to batter or just used them to top each cookie. I guess you could put some of the chopped ones in the batter). Bake in a 375 degree oven for 12-14 minutes. Cool on wire rack.

Santa Fe Chicken
1-15 oz can black beans-rinse and drain *
2-16 oz cans whole kernel corn-drain *
1 cup thick & chunky salsa-your choice of heat
1/2 package taco seasoning
6 boneless, skinless breasts
8 oz cream cheese-cube small
2 cups Monterey Jack, Cheddar, Pepper Jack-or a combination of any
3-4 cups hot cooked rice (I have used yellow rice also)

In a 6 qt crock pot mix beans, corn, taco seasoning and 1/2 cup salsa. Top with breasts. Pour remaining salsa on top of chicken. Cover and cook on high 3 hours. DO NOT OVERCOOK! Remove chicken and cut into bite sized pieces. Return to crock pot. Add cream cheese and turn on high long enough to melt cheese. Serve over rice and top with grated cheese.

**I save the liquids I drain from all veggies-olives and mushrooms included in a ziploc freezer bag. I also save all broths from veggies I cook like string beans, peas, etc in this bag. I use this mixture for my veggie broth when making homemade soups. You can use it in the place of water in any soup recipe and it makes your food taste better as it has all the season in it.
