Nancy ================================= Carole in Calgary requested tea cookies: Old-Fashioned Tea Cookies 3/4 c. butter, softened 1 c. sugar 1 egg 2 t. vanilla extract 2 1/2 c. self-rising flour Confectioner's sugar In mixing bowl, cream butter & sugar. Beat in the eggs & vanilla. Gradually add flour. Roll dough into 1 " balls. Place 2 in. apart on ungreased baking sheets; flatten slightly with fingers. Bake 325 for 17-20 min. Cool for 2 min. before removing to wire racks to cool completely. Dust w/confectioner's sugar. Yield: 4 dozen (Source Unknown) Lemon Tea Cookies Phyllis Dietz, Westland, Michigan says this recipe was in her family since the 50's when her mother got it from a French friend in her club. 3/4 c. butter, softened 1/2 c. sugar 1 egg yolk 1/2 t. vanilla extract 2 c. all-purpose flour 1/4 c. finely chopped walnuts Filling: 3 T butter, softened 4 1/2 t. lemon juice 3/4 t. grated orange peel 1 1/2 c. confectioners' sugar 2 drops yellow food coloring, optional Cream butter & sugar in mixing bowl. Beat in egg yolk & vanilla. Gradually add flour. Shape into two 14" rolls; reshape each roll into a 14"x1 1/8"x 1-1/8" block. Wrap each in plastic wrap. Refrigerate overnight. Unwrap & cut into 1/4" slices. Place 2 " apart on ungreased baking sheets. Sprinkle half of the cookies w/nuts, gently pressing into dough. Bake at 400 for 8-10 min. Remove to wire racks to cool. In a small mixing bowl, cream butter, lemon juice & orange peel. Gradually add confectioners' sugar. Tint yellow if desired. Spread about 1 t. on bottom of the plain cookies; place nut-topped cookies over filling. Yield: about 4 1/2 dozen. (Source: Taste of Home, Dec./Jan. 2004) Athena in DE ===== For Sally from PA. who wants a good spaghetti sauce recipe. Here's one from an Italian grandmother. NANA'S SPAGHETTI SAUCE (SUGO) 2 28 oz. cans tomato puree or crushed tomatoes 3 28 oz. cans water about 3 or 4 TBSP. Olive Oil 1 large onion, chop fine 2 or 3 green onions, chopped 2 or 3 garlic cloves, chop fine 1 6 oz. can tomato paste 4 6 oz. cans water ½ teasp. baking soda 2 TBSP. salt Dash of black pepper 1 TBSP. sugar (or more if needed) Dash hot sauce 4 or 5 leaves fresh basil, chop fine or a pinch of dried basil, ( crush with fingers) In 8 quart saucepan, put a little olive oil , then the 2 cans puree and 3 cans water, stir, then bring to a boil, turn down to medium low and simmer. Put olive oil in a large skillet, and saute the onions until golden, add garlic and cook a few seconds more. Add tomato paste and cook about 10 minutes, stirring often. Add the 4 cans water, blend completely, bring to a boil, then add to simmering puree. Add the rest of ingredients and simmer uncovered about 2 or 3 hours, stirring occasionally. After it has cooked about 1 hour, add meatballs, etc. I like to add some beef with bone in such as short ribs. Also, you can add pork ribs or Italian sausage for a different flavor. I also like to add a peeled medium potato at the same time, it's supposed to absorb the acid from the tomato sauce.
