I don't put extra utilities on servers that I don't have to. And some of our utilities don't work right unless they are installed after rolling out by template. So I install AV (Kaspersky) and LANDesk after deploying from template. I do install VMware Tools, tho, and Networker (my backup client). And NotePad++, mostly because I prefer it to NotePad. :-)

I do make my Win2008 servers have a C: drive of 30G, tho, since 25G started being too small (the Service Pack wouldn't install due to lack of space).
