I'm not sure what's going on in the video, but as far as I know, Nuke doesn't 
do shadows (unless it very recently added them, and I'm not aware of it - if 
so, it might be that you're using an older version that *doesn't* have shadows, 
and the tutorial is using a newer version).

If the video doesn't explain it, then I don't know how to explain exactly what 
it's doing. However, what you can do to fake some shadows is to put a camera 
where you want your light source, use a scanline renderer to render an alpha of 
the teapot from that camera, then project the alpha of that image onto the 
table object to create a shadow alpha for you to work with.

Hopefully this at least points you in the right direction.
