Hi Warwick, You can configure Domain to work both ways.
Depending on your setup you can choose where content gets posted. By default content belongs only to the site is was posted onto (so content on one.domain.com belongs to one.domain.com etc). You can also set it so that the same piece of content is visible to "All affiliates" (meaning viewable from all sites). A third way is to select which sites content is visible on. It is then just a matter of arranging your site (via menu or Drupal Views) to expose the content.
I agree with Chris that this module takes a bit of understanding and having a chat to someone familiar with it is a good option.
Another option might be the Drupal Commons distrubution produced by Aquia (http://acquia.com/products-services/drupal-commons-social-business-software)
