        There are sources besides the MM illustrations.  From the 
OGC text of the Ankheg you can infer a fair amount of stuff.  For 
example, the OGC description says: "An ankheg usually lies 5 to 10 
feet below the surface until its antennae detect the approach of prey."

        From the antennae, one can infer that it is an instectoid 
creature.  It is 5 by 10 feet Face, and burrows almost as fast as 
it runs.  It has Improved Grab but no claw attacks, and a nasty 
bite with acid.  That is enough to make a fair illustration of 
it, in my opinion.  

        Frankly, the illustrations in the Monster Manual often conflict 
with the stats and text considerably -- so I consider it something of 
a plus to ignore them.  The most egregious that springs to my mind is 
the Air Mephit.  For some reason it is illustrated as a naked woman 
with a sword, which is totally at odds with the description.
