Nick,
I think file sharing startup time is directly related to
how many files and/or drives are being shared.  I have a
similar network to yours with a G4, 7500, 7600, and
a PB540C.  The G4 is the fastest, but has a 30GB disk
and a 10GB disk.  It also takes many minutes to start sharing
files.  The other three computers are fairly slow, but
they start sharing much sooner because their drives are
500MB to 4.3 GB in size.
The G4 takes forever to show up in the chooser, but
the others show up in a minute or less.
That just seems to be the way that
they work from my experience.
One thing to check though, go into your System Folder>Servers
and delete any old aliases that might be in there.  That helps me
sometimes.  I don't know what to tell you about the corruption
stuff.
