The stuttering with IDE controllers can be fixed with some software (I don't know the name off hand). The IDE - SCSI converter isn't a bad idea but an IDE controller will be faster. Using the converter will limit you to the speed of the SCSI bus (5 or 10Mbps depending on machine / bus).
