Certainly. Each catalog is its own self-contained world, essentially,
and can be opened, added to, modified, etc independently of all
others. As long as you didn't remove the original files that were
imported into a catalog, opening it simply picks up where you left
off.

One caution: edits made in one catalog are not shared automatically to
another catalog which looks at the same original images. If you have
that situation, there are two or three good ways to coalesce changes
to shared files which will preserve all edits and history. It's pretty
easy to do, you just have to understand the logic of the operation and
proceed in a sensible order to do it.
