The most important thing about coffee is the > taste, not the temperature. I had a series of job interviews with a well-known coffee chain, which shall remain nameless, but it's an anagram of Stuck Bras, and each one started with a coffee ritual. They drew fresh water, boiled it and let it cool for one minute. They poured it over the heaped scoop of grounds in a French press, then left it for precisely 4 minutes before pouring it. It was excellent - unlike the bilge water they serve in their stores. Of course, that ceremony is nothing compared with the traditional coffee ceremony of Ethiopia. If you've never experienced it then I urge you to book a meal in your local Blue Nile restaurant and make sure you order coffee.
