One of my favorite sushi bar dishes is yellowtail cheeks, which is essentially 
a fish head. Best meat on the beast is the fatty stuff near the head.

My problem with Larry’s recipe is that he used cooked chicken then cooked it 
again for a long time. Other than that, I think it was probably a winner.
