Thunderbird: Yes
OOo: Not all.  There are a few users that really need either Excel or 
Powerpoint.  Those remain with MS Office.  At least I have less licenses to 
manage.
MS Windows: Not all.  There will those who will remain (e.g. CAD users, those 
using programs not yet tested in Linux, etc.)

I heard (unverified) that Goldilocks also migrated(ing?) to Linux.

We are also enforcing that users save their work on file servers.  We're 
experimenting on network booting and do away with a lot hard disks on the 
desktop.  And (as a direction) I'm looking at web-based apps (e.g. Zimbra for 
email).
