It would seem (from playing around a bit) that the transcoding to MP3 is only happening with ecasound. Using arecord, each of the options (FLAC, MP3, PCM) work with the other two disabled, and with FLAC being the default if all are enabled; disabling FLAC causes PCM to be the default (which might help to reduce stress on the Pi a bit). Presumably there is something in the FLAC and WAV entries in the ecasound custom-convert.conf which is preventing them from working, resulting in MP3 being the only usable method? I've tested ecasound with the Pi working hard and it still warbles a bit, but less than with arecord. However, as it is (unecessarily) transcoding to mp3, I wonder if fixing that will reduce the stress.
