So to put this into understandable terms for a dude who is kinda like "huh?" (like me) when it comes to this assembler widget... it's something like a translator, bridging the gap between the API of the Flex application on the client and the CFMX server on the other end.
No. The CF Adapter already does that for general AS / CFC interop via Flash Remoting. If you have a bean in CF with <cfproperty/> tags (and get/set methods), then the CF Adapter knows how to translate the data back and forth already.
The assembler is very specific to data grid binding, as I understand it, providing a standardized server-side interface (four methods) for managing persistent data.
