Depends a lot of which OS you use. Some folks swear by EAC, others swear 
at it. On windows I usually used CDex, it was less frustrating, if 
perhaps less accurate than EAC. On Linux, I use grip.

The quality of the data in cddb/freedb varies a lot by genre.
If your collection is pop, or stuff they play on the radio, you will 
have a large percentage
of success.

For jazz, its not nearly as good.
For classical, its terrible.

Again, it depends on the CDs. You can expect to get about 50% with FLAC.
So a full CD, holding 700 MB would take 350MB each. But a lot of 
pop/rock/current CDs are much less than a full 700 MB, so they take lots 
less.
