For what it's worth, here's what I'm doing:

I use iTunes to RIP my CDs.  I have iTunes manage the files and folders
(based on the tags as edited in iTunes).  This results in the usual
music/artist/album/song directory structure.

I'm using a stock SB Touch for playback, basically just browsing either
by Artist or Album.

With the limited display width, I try to be concise.

I consider an "Album" to be THE work (singular). One physical CD with
three works becomes three "albums". The album tag is "Composer - Work
(Optional ID)". For instance: 
"Beethoven - Sym #3", 
"Beethoven - Sym #5 (Solti)", or 
"Beethoven - Sym #5 (HvK)".

I usually consider that the "Artist" is the Orchestra, or in some cases
Orchestra+Conductor.  I want to keep the number of "artists"
manageable.

For the track title I usually use "Composer+ShortWorkTitle - #
movement". (Arabic numerals are much easier than Roman numerals.)

In iTunes, I fill in the Composer tag as "Last, First (born-died)"

In the "Comments" tag, I'll put in the names of conductor, soloists,
recording locations, CD number, etc. as seems appropriate.

Of course, everything doesn't quite fit this scheme, but it works quite
well for me.  It's also a lot manual work as the online databases have a
different style.

Earlier, after several test sessions, I found that MP3 at 320kbps
seemed like a good choice sonically. But sometime later, I found that
even with the iTunes "gapless" flag set, I did not get glitch-less SB
Touch playback with continuous pieces of music. Compositions with
distinct movements were fine, but things like "Carmina Burana" or an
opera would have audible glitches (not gaps) at some track
transitions.

For such cases I found that re-ripping with Apple Lossless solved the
problem.

Whatever you choose, I'd suggest taking it slowly and be prepared to go
back and change as you gain more experience.
