Yup. But I think Dan is asking for a volume measure. Cups or
liters or other such measure.

I don't have a scale, but from what I understand, mass measure is
SO much more accurate and repeatable than volume measure -
especially for flour.

Whole grains can have just as much. But the source has to be a
high gluten wheat berry! Hard white wheat is my preference for
bread.

Rye has almost no gluten. So if the rye is a significant portion
of your flour even a really high gluten wheat may not be enough.
So then adding gluten makes sense.

The founding Constantine was the guy who made all of the desks in the Senate
chamber, I believe. The place they had in NYC was amazing, like going back in
time. They closed it in the early 2000s, I think. I’ve bought veneer from them
and marquetry supplies as long as I’ve done woodworking.

They have a “box ‘o’ veneer” you can buy that has a bajillion samples that are
labeled for cheap, like under $10. It’s a great thing to have for matching and
just exploring possibilities with different species of veneer.

I've made regular bread with a significant addition of instant potato flakes.
Gave the bread a nice flavor.White flour is in short supply at our market, I
looked around a little but couldn't find potato flakes. Not sure what section

Re: [MBZ] OT: Eats?

2020-03-30 Thread OK Don via Mercedes
We've been making all of our own bread since about 1980. I bought the wife
a Kitchenaid lift mixer around 1985, and it's mixed every loaf since then.
She is using all sourdough leavening now. The older the started gets, the
milder it is. We'll have to make a new started to get the sourdough taste
back, but I don't miss it all that much. We use sprouted spelt whole grain
flour, add rye and/or buckwheat as the mood hits, and gluten to all of
them. We've also gone to making rolls instead of loaves as we don't eat
bread everyday. Freeze them, then pop how ever many in the microwave to
thaw when needed.

Otherwise, the freezer is still pretty full - we hit the local butcher a
week before he closed to retail customers and got well stocked up on beef
and pork. The frozen fish is getting low, might need to go to a store this
week - haven't been for over two weeks now. We are still eating the Ahi
Amarillo peppers, jalapenos and Thai peppers that we grew and froze last
summer.

The indoor greens are starting to come - renewed the containers after
growing all our salad greens for 6 months. We do need to stock up on things
like onions, celery, carrots, egg plant, etc.

looked sideways at them. I can’t count the number of XKEs I put floorpans back
in the days when I was making a living working on these.

I likened it to being a funeral director - no matter how bad things got, we
would always have corpses coming in the door.

I think you’re right. I seem to recall that being the case - you peen a dimple

I think you are wrong. I remember that a close read of the 1985 Technical
Data Book showed that in ROW, one could purchase a 123.193 with a manual
transmission, unlike the USofA. So not only did the ROW get the turbo,
they could also get a manual transmission.

With the tilt-head mixer did you ever have trouble with the bowl popping
out of the base with heavy mixing (e.g. bread dough)? I had to braze
extra metal onto the "threads" on the bowl to stop that happening.

[MBZ] ***SPAM*** RE: OT: Eats?

2020-03-30 Thread Greg Fiorentino via Mercedes
I'm pretty sure that 1 lb. of grain yields 1 lb. of flour. I weigh out the
grain and only mill as much as I use for the recipe so the flour is fresh. On
the Kitchenaid brand of mill I was never able to get really fine flour. With
the FGM I run it through once to crack the grain, then 3X at the finest
setting. Because whole grains have less gluten, I add gluten to my recipe. Some
other list members have other brand mills as I recall.

Milling grain to make a large loaf takes about 20 min. during which time I can
gather other ingredients. Once everything is in the machine I only need to slit
the top of the dough just before the baking starts, then dump out the loaf on a
rack when it's done.

It's worth it for me because I can't find real whole grain bread with a
significant portion of rye commercially, and certainly none that are as fresh
and as good as what I make.

Just out of curiosity, how much grain does it take to produce a cup or pound of
flour? I’ve seen the grain mills before, but was concerned about it being far

Re: [MBZ] OT: Eats?

2020-03-30 Thread Clay via Mercedes
There is a qualified dearth of dining options in ANC at this point. Lots of
small local places are trying to do take out with 10% of their staff on hand.
SWMBA will only support local at this point, and take away meal was procured a
few days ago. I had to get online to trace who was even open anymore, as each
passing day more establishments are going under. It took an hour of looking
over menus on web sites, calling and finding the place was closed down or the
menu was no longer congruent with offerings, but we did end up with a meal for
each homebound hostage. Three businesses, each overly appreciative of the
opportunity to serve, and socially distanced handover. Arrive at the appointed
time, stay in the car and let them know it is safe to plop the meal on the
outdoor transfer spot. Give them time to scurry back inside, then trudge
through the snow to secure the package. Once home, toss it in the nuker to
warm it back up.

Many higher end spots offer a take and back meal for four. Call in for the
daily offering, pay with CC, get your pick up time and gather your goodies.
Head on home with ready to heat meal option of the day. The faster food places
do hot food for in car consumption, of the burger and fries sort.

At the house, there are three people with three disparate schedules for
feeding, so very much grab and scarf what you find as either left over or you
get creative and make something that ends up with left over.

I did replace the tab that the pivot rod goes through a few years ago

With the tilt-head mixer did you ever have trouble with the bowl popping
out of the base with heavy mixing (e.g. bread dough)? I had to braze
extra metal onto the "threads" on the bowl to stop that happening.

True. I wasn’t making a HP comparison, really, more of a performance one -

Re: [MBZ] OT: Eats?

2020-03-30 Thread Dan Penoff via Mercedes
Not that I recall. Some years back it got knocked over on the left side, and
that rendered the “On/Off” switch wonky in that the detent that held it in the
“Off” position was really touchy. You always made sure it was off before you
plugged it in (which you should do anyway.) When I opened it up to do the 10
year grease maintenance I looked at the switch but couldn’t determine what the
issue was, so I just buttoned it back up.

I did replace the tab that the pivot rod goes through a few years ago because
the opening in the tab was getting worn out and the mixer head would wobble
under heavy loads like you describe.

Best appliance ever. Built like a brick doghouse, simple and inexpensive to
repair.

86/87 for 300SDL, and 90/91 for 350SDL. None in 88, for whatever reason.
The 300's have potentially bad heads, the 350's have potentially bad rods.

With the tilt-head mixer did you ever have trouble with the bowl popping
out of the base with heavy mixing (e.g. bread dough)? I had to braze
extra metal onto the "threads" on the bowl to stop that happening.

After 20+ years of use, we just retired our KSM90 KitchenAid stand mixer (tilt
head) and moved up to the larger 6 quart bowl lift model. That thing will rip
your arm off, given the opportunity. I only wish the bowls would sit flat on

I've also made some bread. I use our machine only to mix, I then transfer to a

I think I've finally given up on the pan of water in the oven while I bake

Supply/demand working properly. The sure way to cure the toilet paper

called "price gouging" in the media.

What's worse, having to pay more for something, or not being able to buy

After 20+ years of use, we just retired our KSM90 KitchenAid stand mixer (tilt
head) and moved up to the larger 6 quart bowl lift model. That thing will rip
your arm off, given the opportunity. I only wish the bowls would sit flat on
the counter. Fortunately, all of the PTO driven accessories work with both, so
we were able to keep those. Never got a grain mill, but have a grinder and
pasta maker.

Well one thing I have noticed is that the farther up the socio-economic chain
the more plentiful stuff gets.

WalMart is out, Publix might have some, there’s all kinds of stuff at the Fresh
Market. For those willing to pay the higher prices stuff is still there.

Haven’t looked at paper goods, though. I might do that tomorrow to see what’s
there.

Very similar to driving the 560SEL, except with more engine noise,
usually somewhat less options (like heated seats, etc.), and the ability

Re: [MBZ] SDL

2020-03-30 Thread Dan Penoff via Mercedes
I can’t speak for Curley, but I believe he is lauding the graces of the W126
long wheelbase diesel, specifically the 300 or 350SDL.

They’re wonderful cars to drive, especially the 350SDL. The amount of power
that engine has for the size of the car makes it drive almost as well as a
gasser. I know the 350SDL I had would stand up on it’s hind legs without
hesitation when you mashed the throttle. Really surprised me, as I had never
driven a car with the 3.5l diesel. A very strong engine.

It was an even better car after I put a 19mm rear sway bar on it. The
difference that made in body roll was amazing. The back end of the car stayed
planted like it was nailed down.

Re: [MBZ] OT: Eats?

2020-03-30 Thread Curt Raymond via Mercedes
Its funny that people seem to have forgotten those places exist. We go to the
co-op in Keene, last time we went they had everything you could want. People
were crying about not being able to get stuff like ground meat at the grocery
store...

I’ve got a freezer full of food and plenty of fresh stuff, too. I’ll go to the
Fresh Market, one of those upscale bespoke/non-GMO/free range/artisinal grocery

Re: [MBZ] Volvo PV544 on BAT

2020-03-30 Thread Kevin Kraly via Mercedes
I sure did enjoy the 1958 Volvo PV444 that we had in the 1990’s. It was a
mostly original driver quality car, but still a head turner. Someone re-powered
it with a B18 engine which was more powerful than the original B16. During the
move from California to Oregon, the moving company damaged it, so we decided to
prepare it for a full restoration which was never to be. We ended up giving it
away a few years later. Hopefully, it’s still around or donated parts to
another driver.
