Yes, it is Rich text. I just played with this and was able to create a link. I highlighted the text I wanted to use, pressed command-k to create the link, and was prompted to put in the uRL. I'm not sure if this works in a signature, but you can give it a try. The add link option is also found

Hey John, Back on the phone with ATT. Not sure how this stuff always happens to me. The first guy at ATT claimed you need to open the iPhone to get to the SIM card so the phone can be activated. I said to him, don't they list all that info in the settings and he said no. I knew he was wrong.
