The issue seems to be that evolution uses icons like stock_lock-ok. In Precise, these are in gnome-icon-theme-full, which is not installed by default. gnome-icon-theme depends on humanity-icon-theme | gnome-icon- theme-full. I don’t know the reasoning behind this split of g-i-t, so I don’t know
