One question. How do I stop the app from emailing me the note every
time I edit it? I like the email function, but I'd like to control
when the note gets emailed to me.

You could do this using the cloud, like iCloud, Ubuntu One, Google Drive
and so on, along with an editor that works with different cloud options
like Nebulus, Note Master and so on.
