Go to settings, general, accessibility, VoiceOver, braille, and change the
translation table from UEB to American. Note that American braille will change
to UEB in the next few years, so it will become necessary to learn these new
rules.

In your case, go to settings, general, accessibility, VoiceOver, braille, and
set the braille translation table to UEB. After that, your braille display will
show UEB rather than US contracted braille.

I set my iPhone to UEB and used it to teach myself UEB. I taught myself
computer braille in the early 90's, so I have 8-dot mode (computer braille)
active, and switch my braille display whenever I am not certain of a symbol.
