It is possible to start a culture with store-bought, packaged yogurt but it takes about 3 cycles before it is edible (imho). I did write to Nestle asking and my understanding of the reply was that pasteurised milk was 'inoculated', cultured and subsequently 'sterilised' before packaging and shipping (quotes are mine).
