To me, too this thing still doesn't make sense. I don't set my yogurt with my hands....though I used to mix the batter with them...er, with only the "morally approved by Indian culture" right hand....so...I still wonder at what prompted this "observation". "I have high 'body heat', my cooking spoils quickly/batter ferments fast/curds turn sour quickly/mehendi turns a deep red on my hands" has been something I have heard frequently from female relatives. You brought back memories, Ms. Dot, and not all of them pleasant! :) I just buy the idli batter when I need it now. 25 rupees' worth (that's about 50 cents?) keeps me in idlis/dosas/uthapams for several days...
