I noticed one of my favorite root vegetables is on this list, cassava also
called Yuca - not to be confused with the cactus Yucca.

Cassava is what Tapioca is made from, also high in B15, Pangamic Acid it is eaten in Cuban cuisine cooked like a french fry it is delicious. It is also made at Christmas as a traditional dish called Yucca con Mojo, with a garlic
oil. Yummy.

I discovered it when looking for a potatoes substitute. It spoils easily though and comes heavily waxed. Breaking off a tip to make sure the flesh is pure
white and not moldy is tradition as well.

Local grocery stores carry it here in central Texas.
