Dear pj, Some trial and error. Start with a pressure cooker and adapt the nipple to fit a copper joining pipe, and then carry this right through to a copper coil. Copper isn't ideal, as it can leach into the water, but this doesn't happen while the steam is creating pressure. When you finish distilling suck the pipe clear, and then spit out the water, don't let it stand or it will contaminate the next batch. We are still looking for an affordable stainless steel coil, and any rubber has drastic results.
When you are experimenting with water, it's best to use an analogue multi-metre. The digital ones instantly blow a fuse if your measurement goes off the scale. Analogue ones do eventually if you keep doing it, but tend to be more resilient. It's brewed a lovely clear batch of CS, which tastes a tiny bit different from bought water, but nothing that we can't live with. You can run through a water filter (Kenwood or Britta) at the end, but I didn't find it made any difference. As I started with tap water which is OK to drink anyway, I wasn't too bothered about this. What you get left in the bottom of the boiling pan looks as if it will grow legs and walk away. This is what we are drinking and considered to be pure. I expect it's the chlorine that kills the bugs!
