What I read was that raw honey will crystallise,
and honey extraction with heat treatment over
a specific temperature kills enzymes, with the
added result that such honey stays runny.

Why not e-mail a couple of producers of raw honey?
The one I posted to, did not bother answering...

The label on the buckwheat honey that I have says that it is unpasturized so it should have crystalised so could there be another reason why it is still runny after being over a year old?
