Jim, my Dad was a commercial Apiarist from 1945 to 1960, (bee keeper) and he was at the forefront of honey production, and he said that inconjunction with the CSIRO (an Australian Govt research body), all honey had the same enzymes which were the ones that acted like an antibiotic. When he saw the price per kilogram that was being charged for the so-called Medical honey, he would shake his head. Dad was a fanatic regarding the production of honey, he never heated it above a certain temperature, if overheated it would destroy the enzymes in it, and the exact figure I can't remember, but he could look at honey and tell you whether it had been overheated.
