So the endpoint will respond in g.711 even though it is set to g.729 preferred 
because the sender requests it first.
I'll have to search and find out if there's a way to change the behavior of the 
mediant based on the type of call coming in.
We use IP routes, not detection so I'm not sure that can be done.

Nice to get a better basic understanding of this.
