We use Patton PRi gateways from a real TELCO and then we use their FXS gateways to connect the fax machines. ALL the DID hit sipx. All the gateways register to sipx. We simply point the DID number in sip to the user/alias or to the unified messaging screen to make the inbound fax paper or paperless for that device. It's not overly simple until you have done it once, but all the DID's go one place and everything has a CDR cut for it.
We find when a fax machine breaks, we move the DID the the back screen and keep receiving faxes, making this approach FLEX-ible. We just find it works well to do it like this, but using a real telco is a key ingredient.
